Davy Jone's Heart, as implied by the name, is the heart of Davy Jones, the captain of the Flying Dutchman. It is his sole weakness, and thus is often used as leverage over him in the films. It lies in the Dead Man's Chest, which is buried in Isla Cruces. It is the central object of Pirates of the Carribean: Dead Man's Chest and At World's End.
Prior to the events of the film, the sea goddess Calypso tasked Jones with ferrying the souls of those who died at sea to the afterlife, at the cost he couldn't step on land for 10 years. When the two could finally be reunited, Calypso wasn't there, to Jones dismay. Because of this, he went to the first Pirate Brethren court, and taught them how to imprison Calypso in human form. However, Jones felt tremendous guilt for what he had done, and his pain became too much for him to live with. Thus, he carved out his heart, and placed it in the Dead Man's Chest. He then cursed the chest so that whoever would stab his heart would take his place as captain, forced to carve out their heart in turn. He then buried the chest at the island Isla Cruces.
At the beginning of Dead Man's Chest, Jack Sparrow, who owes a debt to Jones, sets out to find the chest, in order to use Jones' heart as leverage against him. He sends Will Turner aboard the Dutchman to find the key to the chest and uses Elizabeth to find the chest himself using his compass. Ultimately the three, alongside former admiral James Norrington, arrive at Isla Cruces, and uncover the chest. However, Jack, Will, and Norrington then engage in a three-way fight for the key to the chest: Jack to save his life, Will to save his father who is a member of Jones' crew, and Norrington to give the heart to Lord Cutler Beckett so he can regain his former life. However, the three are chased by the Crew of the Flying Dutchman. Eventually, Jack takes the heart and puts in a jar of dirt, only for Norrington to steal it, while Jones henchman retrieve the chest, and Jack accidentally destroys the jar of dirt. Norrington then gives the heart to Beckett.
In At World's End, Beckett has used the heart to control Jones, having him exterminate most of pirates, and plans to find the Brethren court. Due to Jones' recklessness, Beckett brings the heart aboard his ship, to Jones' dismay. At one point, Elizabeth's father attempts to destroy the heart, but is swayed by Jones into refusing. During the final battle on the maelstrom, Jack retrieves the chest, which now contains the heart, while being attacked by Jones. Jones, meanwhile, retrieves the key from killing Beckett's right-hand man Mercer. Jones is attacked by Will and Elizabeth, allowing Jack to open the chest, and threaten Jones. Jones then opts to stab Will, leading Jack and Elizabeth to let Will stab the heart, killing Jones and making Will take his place as captain of the Flying Dutchman. Will then gives the chest and his heart to Elizabeth, claiming it's always belonged to her.
